I "think" the 2101 is the newer model, yet the 2001 is more expensive.  What is the difference between them?  Is the 2001 better in some way to justify the higher price?

You are correct the 2101 is the newer 21 inch model and it has the 5 aH battery and a rapid charger.  The 2001 is the older 20 inch model and it only has a 4 aH battery and a fast charger.  The difference in price I believe is due to the fact that Home Depot carries the 2101 in the store, and the 20 has to be ordered in through the internet.  The 2101 is a better, newer mower with a bigger battery.

I chose the LM2002 which is the older mower with a 5 aH battery and a fast charger because looking at the weights listed at Home Depot I believed the 20 inch to be 13 pounds lighter.  I have since come to the conclusion that there is a difference but not 13 pounds.  The LM2101 is a much better buy and you don't have to wait for it.

I wouldn't go so far as to say the 21-inch model is "better." it has some nice upgrades, but some people think the 20-inch model is better at mulching in some situations.

The 20-inch model is currently the same price as the 21-inch at Amazon.

I can't address the mulching, but I thought the 21 inch had a more powerful and improved motor.  Or am I confusing that with the 20 inch steel deck with the brushless motor?

You're right, the 21" models are more powerful than the original 20".
